You Cai Soup - Don’t stand too close to a naked chef

Yes, you can easily cook this soup, even when naked, and you are going to be real HOT. Hot from the heat from the stove… what were you thinking?

It all started with some leftover naked chicken bones. Totally stripped of meat. To throw them away is such a waste. Remember: thou shalt not let the chickens die in vain.

So armed with my secret ingredients, dried shrimp and dried mini scallops (I have said this so many times I think I sound like a broken record), I made soup out of the chicken bones.

Ingredients:
- 2 cups you cai
(see picture on right in case you are wondering what it is)
- 2 cups chicken bones
- 1 tsp dried shrimp
- 1 tsp dried scallops
- 5 cups water
- salt
- white pepper

Method:

1. Pour 5 cups of boiling water into a saucepan containing the chicken bones, dried shrimp and dried scallop.

2. Let it come to a boil and then allow to simmer for 2 hours.

3. Three minutes before serving, add you cai.

4. Add salt and pepper to taste.

Cooking Tips:

One good way to remove the fats from the chicken soup is to keep the soup in the refrigerator overnight. The fats will solidify and you can remove almost all of it.

    The cooking? Through recipe books and many taste tests.
